1. Autumn Spiced Aperitivo Spritz  

Per Se Aperitivo is a Portuguese apéritif liqueur launched in 2019 featuring botanicals such as cardamom, orange and Jamaican pepper for a spicier alternative apéritif to Aperol. It offers a balanced taste that is light, spiced, sweet, and slightly tart with a refreshing citrus finish. Angostura bitters amplify the spice while maple syrup adds a sweetness to pull back the more bitter flavours. Prosecco and soda water combines for a drink that is light and wonderfully crisp!  

  • 45ml Per Se Aperitivo 
  • 90ml Prosecco 
  • 30ml soda water 
  • 10ml maple syrup 
  • 2-3 dashes Angostura bitters 
  • Orange slice for garnish  

 

Pour in Campari and maple syrup into a large wine glass filled with ice.  

Top with Prosecco and soda water. 

Add Angostura bitters, stir gently once and garnish with orange slice to serve.

2. Rosemary Gin Fizz  

The egg white creates that lovely milky and silky texture, while the rosemary adds piney, Autumn herbaceous notes. The flute presentation makes it elegant and aperitif-appropriate. Lillet Blanc would be particularly lovely here – it complements both the cocktail’s herby and citrus flavours, with the addition of some floral and white fruit complexities.  

  • 35ml gin 
  • 20ml Lillet Blanc 
  • 20ml fresh lemon juice 
  • 15ml rosemary simple syrup 
  • 1 egg white 
  • 90ml soda water 
  • Rosemary Sprig for garnish  

 

Dry shake (no ice) gin, lemon juice, rosemary syrup, and egg white.  

Add ice and shake again, vigorously.  

Double strain into a chilled flute glass.  

Top gently with soda water and garnish with fresh rosemary sprig.

3. Apple Cider Spiced Autumn Cocktail

 This cocktail combines the warmth of bourbon with crisp sparkling apple cider and classic autumn spices to encompass the flavours of a crisp and sunny Autumn day walk. Angostura bitters add depth, while lemon juice provides brightness and maple syrup maintains sweetness. 

  • 60ml bourbon whiskey 
  • 120ml sparkling apple cider 
  • 10ml maple syrup 
  • 15ml lemon juice 
  • 3-4 dashes Angostura bitters 
  • Pinch of ground cinnamon 
  • Ground cinnamon to rim 
  • Thin apple slice for garnish  

 

Cover the side or rim of a rocks glass with cinnamon by dipping in syrup and then rolling in a plate of ground cinnamon.  

Add all ingredients to glass with large ice cubes and stir well for 15-20 seconds.  

Garnish with dehydrated apple slice through a cocktail pick and serve.

4. Bay Leaf Boulevardier 

Armagnac’s more robust character, featuring notes of dried fruits (like plums and figs), spices and burnt toffee, brings the autumn energy to our take on an Autumn Boulevardier.  The Campari and sweet vermouth create a rich and orangey flavour, amplified by bitters, while the bay leaf adds herby aromas when you drink it.    

  • 45ml Armagnac 
  • 30ml Campari 
  • 30ml sweet vermouth 
  • 10ml honey  
  • 2-3 dashes orange bitters 

 

Add all ingredients to a mixing glass with ice and stir for 20-30 seconds until well chilled. 

Strain into a rocks glass with large ice cubes.  

Express oils from orange peel over drink, garnish with fresh bay leaf and serve.

5. Autumn Champagne Cocktail

Building on the classic Champagne cocktail, which already hints at autumn with its aromatic Angostura bitters and brown sugar, we’ve elevated it with cognac and cardamom for distinctive warm and aromatic spice. Orange bitters provide citrusy brightness that balances the rich Autumn warmth, creating a unique seasonal twist on this timeless cocktail. 

  • 100ml Champagne (or dry sparkling wine) 
  • 15ml cognac 
  • 1 brown sugar cube  
  • 1 dash orange bitters 
  • 2 dashes Angostura bitters 
  • 2-3 cardamom pods  

 

Place sugar cube in a chilled wine glass and saturate it with Angostura bitters. 

Muddle 2-3 crushed cardamom pods in a mixing glass with orange bitters and Armagnac.  

Double strain into glass.  

Top slowly with Champagne.  

Stir gently once, express orange peel over the top and serve.

6. Autumn Warmth Old-Fashioned 

This keeps the Old Fashioned DNA – spirit-forward, stirred, over ice – while incorporating seasonal citrus and spiced elements. A bit of orange juice is a welcomed to add brightness and makes it a bit more approachable. Rosemary adds herby, aromatic complexity, whilst balancing the spicier flavours! 

  • 60ml bourbon whiskey 
  • 15ml fresh orange juice 
  • 10ml cinnamon syrup 
  • 5ml honey syrup 
  • 3 dashes orange bitters 
  • 2 dashes Angostura bitters 

 

Add cinnamon syrup, honey syrup, and bitters to rocks glass. Then add orange juice and stir to combine.  

Fill with large ice cubes, add whiskey and stir well for 15-20 seconds.  

Garnish with expressed orange peel, cinnamon stick, and fresh rosemary sprig.

Autumn Marigold Sunset  

  • 45 ml Gin 
  • 30 ml Freshly squeezed lemon juice 
  • 20 ml Marigold simple syrup 
  • 2 dashes Orange Bitters 
  • 1 dash Angostura Bitters 
  • Edible marigold flower for garnish 

 

Add gin, lemon juice, marigold syrup, and both bitters to a cocktail shaker with ice.  

Shake vigorously for 10-15 seconds. 

Double strain into a chilled coupe glass. 

Garnish with edible marigold flower floated on surface

Autumn Berry Skies

 

  • 50 ml Mezcal or Aged tequila (less smoky)
  • 25 ml Crème de Mûre
  • 15 ml Fresh Lemon Juice
  •  1-2 tsp Honey
  • Couple dashes Orange Bitters  
  • Edible marigold flower for garnish 

 

Add mezcal/tequila, Crème de Mûre, lemon juice, honey, and orange bitters to a cocktail shaker with ice. 

Shake vigorously for 15-20 seconds (longer to fully dissolve honey) 

Double strain into a chilled coupe glass. 

Garnish with edible marigold flower floated on surface.
